Ingredients

  • Extra virgin olive oil 8 tbsp
  • Roasted Red Peppers 8 oz
  • Asparagus Spears (cut/wash) 8 oz
  • Portobello Mushrooms 4 oz
  • Red Onion 2 oz
  • Balsamic Vinegar 4 tsp
  • Fresh Basil (wash/chop) 4 tsp
  • Fancy shredded Parmesan Cheese 2 oz

Directions

  • Heat oil in medium sauté pan.
  • Add peppers, asparagus, mushrooms, and red onion & garlic.
  • Sauté about 2 minutes.
  • Add Balsamic vinegar.
  • Cook until hot.
  • Add ravioli to the vegetable mix and toss.
  • Add the basil and garlic, cook until heated.
  • Place in a bowl and garnish with shredded Parmesan.
